200 g fresh curd cheese (topfen)
1/2 cup sour cream
grated lemon peel of one lemon
60 g semolina
250 g sugar
4 yolks
4 egg whites
20 g butter

  • Zubereitung

Mix curd cheese, lemon peel, 110 g sugar and semolina to combine and allow to rest for 20 minutes. Add 4 yolkds, beat the egg whites until stiff and fold into the mixture. Caramelize the remaining sugar and add it to the mixture together with the cold butter. Butter a skillet, fill in the mixture, preheat the oven and bake at 180° C for about 10 minutes. Tear apart the "Schmarren" with two forks into bite-sized pieces and serve with stewed fruits or fresh fruits.
