750 g beef (shoulder, tail of rump)
1 bunch soup mirepoix (vegetables for the soup: celery, carrots, leek, parsley roots)
1 onion
5 peppercorns
2 bay leaves
saltz
garlic for the soup

- Zubereitung
Take a large pot, fill in cold water, place beef in it, add the vegetables and simmer for 1.5 hours. Skim the foam time and again. Take out the beef, cut it in slices and serve with vegetables.
