150 g powder sugar
1 pinch salt
100 g flour
1 teaspoon baking powder
250 g raspberries
250 g mascarpone
500 g curd cheese (quark or topfen)
3 p. whipped cream stabilizers
1 sachet vanilla sugar
150 g whipping cream

- Zubereitung
Separate yolks from the egg whites; beat egg whites until very stiff and mix with half of the sugar and a pinch salt. Add yolks, sift flour and baking powder and fold in the mixture.
Line a baking tray with parchment paper, spoon mixture onto the paper. Preheat the oven to 200° C and bake for 8-10 minutes. Sprinkle some sugar on a surface, turn out the cake and remove the paper. Roll in the cake and let it cool.
Mix mascarpone and curd cheese, whipped cream stabilizer, the remaining sugar and vanilla sugar, stir until smooth. Wash the berries, wait until dry and fold in the mixture. Roll out the dough, spread cream onto the dough and roll in again. Allow to sit for one hour.
Sprinkle roulade with caster sugar and if desired, garnish with some berries.
