400 g wheat flour
4 eggs
1/2 teaspoon salt
2 teaspoons oilbr>4 tablespoons puréed spinach

Sift flour on a work surface. Press a hollow right in the centre. Add eggs, salt, oil and spinach that had been squeezed out well beforehand. Blend flour from the edges to the inside well with all ingredients and knead at least 10 minutes until an elastic, smooth and shining texture occurs. If dough is too stiff, just add a few drops of water.
Wrap dough in a moist cloth and let it set at room temperature for 30 minutes.
Sprinkle flour on a work surface, thinly roll out dough, dry for 10 minutes. Roll up dough and slice into small or wider strips. Cook in ample salt water.
