Fried Apple Pancake Swiss Style

4 sourish apples
2 tablespoons granulated sugar
pinch cinnamon
half lemon juice
1/8 l milk
2 eggs
pinch salt
Ca. 100 g flour
1 tablespoon sugar
1 tablespoon rum
butter or butterfat to fry

  • Zubereitung

Wash, pare, core and thinly slice apples, stir in granulated sugar, pinch cinnamon and lemon juice. Mix milk with eggs, add flour, pinch salt, one tablespoon sugar and rum. Fold in sliced apples. Heat butter or butterfat, pour in dough, put in the preheated oven and bake one side at 180° C. If side is golden brown, flip over pancake, bake for some minutes, tear apart with two forks, cover and leave for another five minutes. Sprinkle with cinnamon and sugar. Serve with stewed fruits, coffee or cold milk.
