10 apricots
50 g butter
2 eggs
1 egg to brush
50 g powder sugar
1 sachet vanilla sugar
rum
300 fresh curd cheese (topfen)
lemon peel
500 g puff pastry

  • Zubereitung

Cream the butter, sugar, lemon peel and vanilla sugar until light. Alternately add the eggs and rum, curd cheese and the beaten egg whites. Unfold the pastry sheet on a lightly floured surface. Now spoon the mixture onto the bottom half of the pastry. Then put the apricots onto it and roll it up gently. Put the strudel on a greased baking tray and bake at 200° C for about 20 minutes until it is golden brown. Serve it hot, tepid or cold with a dollop of whipped cream.
