300 g aubergines
300 g tomatoes
250 g strained tomatoes
olive oil
garlic cloves
sprig thyme, sage, sprig rosemary

- Zubereitung
Wash vegetables, cut into approx. 2 cm large cubes. Sweat thinly sliced onion and peppers in olive oil. Add the vegetables and season with salt, pepper and three garlic cloves. Stir in 2 tablespoons tomato paste and mix with the strained tomatoes, simmering for 5 minutes. Add tomato cubes, season to taste with thyme, sage and rosemary.
